Ahhh, that age-old question... 'Mom, what's for dinner?' The trouble is that time is scarce nowadays, especially for moms who do it all. Setting aside two hours to prepare a delicious meal every night simply isn't practical anymore. Opting for greasy takeout meals also isn't a good idea. So what is the solution, then? It is all about finding quick and easy recipes that work for you. Luckily, getting your hands on these recipes really isn't as difficult as it used to be.
Easy-peasy plantain salad
Yes, a salad is generally considered a simple dish. However, that definitely does not mean that it can't be tasty! This particular recipe is sure to entice your taste buds and take you on a real food adventure that the whole family will enjoy. And the best part is that it only takes 20 minutes to prepare! This is definitely one of those quick dinner recipes that you have to try out at least once.
What you will need:
Luckily, the list of ingredients is relatively easy to get your hands on:
- 2 ripe plantains (greener plantains won't taste as good as they do not have as much flavour)
- 1 clove of garlic
- 1 small red pepper
- 1 small green bell pepper
- 1 cucumber
- Black pepper
- 2 tablespoons of fresh lime juice
- ¼ cup of extra virgin olive oil
Please note that the clove of garlic is optional. If you choose not to include it, the essence of the dish will not be affected.
1. Begin by carefully peeling both plantains.
2. Take a medium sized saucepan and fill it with enough water to cover the plantains. Place the plantains into the water and bring it to a boil. Allow to simmer for approximately ten minutes. You will know that the plantains are ready if they are soft enough to pierce with a fork.
3. Drain and set aside.
4. As the plantains are cooking, you can simultaneously begin to prepare the other ingredients. Start with the green pepper. Peel it, slice it into long, thin slices and then proceed to remove as many of the seeds as possible.
5. Remove the seeds from the red pepper and chop finely.
6. Chop the cucumber in the way that you prefer and place it with both peppers in a bowl.
7. Next, turn your attention to the oil. Whisk it well and add the lime juice, salt, pepper and garlic (optional). Whisk for a few minutes until creamy and delicious.
8. Now back to the plantains. Once they have had enough time to cool, slice them length ways and add them to the bowl.
9. Pour the whisked oil, lime juice, salt, pepper and garlic over your creation and toss the salad well.
10. Serve the dish at room temperature an hour after it is made. This extra time allows the different flavours to infuse and intensify for ultimate enjoyment and satisfaction.
