SPAGHETTI SQUASH & PORK STIR-FRY: This is an unusual way of frying but a very delicious dish using the delicate strands of spaghetti squash in this Asian inspired pork stir fry. The great flavors of toasted sesame oil, fresh ginger, garlic and a hint of spicy red chile sauce will cling beautifully on your spaghetti strands. You can serve it with jasmine rice. The recipe can make four servings. Total time involve is two hours, but cooking is only thirty minutes.
INGREDIENTS:
Thirteen pound spaghetti squash
1 pound pork tenderloin, trimmed
2 teaspoons toasted sesame oil
5 medium scallions, thinly sliced
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1/2 teaspoon salt
2 tablespoons soy sauce, please choose the low sodium type
2 tablespoons rice vinegar
1 teaspoon Sriracha, or chile oil or any Asian chili sauce
THE PROCEDURE:
Preheat your oven to 350°F. Then cut the squash in half. Please scoop out and discard the seeds. Then place each half, cut-side down, on a baking sheet. Then bake until the squash is tender for about one hour. Remove from the oven and let cool for ten minutes.
Then shred the flesh with a fork into a bowl. Discard the shell. Reserve.
Meantime, slice pork into thin rounds and cut each round into uniform matchsticks.
Begin frying by heating a large wok or skillet over medium high heat on your American stove. Pour in the oil and swirl to coat the pan.
Then please add the scallions, garlic, ginger and salt and cook by stirring until fragrant for thirty seconds.
Add the pork and cook by stirring constantly until just cooked through or browned for two to three minutes.
Then you can add the squash threads and cook by stirring for one minute.
Then season with soy sauce, rice vinegar and chile sauce (or chile oil).
Continue to stir fry until fragrant for about thirty seconds.
