There are several delicious stir fry recipes in the internet that anyone can try on their own kitchens. But we simply love our own recipe for stir fries at home. One of our best stir fries is pure chicken fillet sauteed by soy sauce and Worchester sauce on plenty of garlic that really makes us wonder if chicken can be more tasteful if not cooked this way.
Anyway, the term "a la Pobre" means of the poor, which is usually used to describe this dish. In the Philippines, it simply refers to this dish which is cooked with plenty of garlic on top of it. "Pobre" in Spanish means actually means poor but having tasted this dish with loads of garlic will surely find it magically delectable. This recipe can be done in twenty to twenty five minutes. But you need to marinate the chicken for at least fifteen to thirty minutes before you cook them. The recipe can make three to four people happy.
OUR CHICKEN A LA POBRE:
WHAT YOU NEED TO HAVE: 500 grams chicken, please use the thigh fillets and cut them into bite size chunks 3 tablespoons soy sauce 2 tablespoons Worcestershire sauce 10 cloves garlic, please chop them finely 3 cloves garlic, please smashed 3-4 tablespoons vegetable or canola oil, divided Black pepper
HOW TO MAKE IT: On a big mixing bowl, please mix the Worchester sauce with the soy sauce and the three cloves of smashed garlic. Mix well to combine. Then add the chicken chunks to the bowl and mix to coat with the marinade. Sprinkle a few dashes of the black pepper. Let it sit at room temperature for fifteen to thirty minutes.
Then prepare you garlic by chopping the ten cloves finely. Please remove the skins too. Chop finely the rest of the garlic.
You can begin frying at this point by heating a large skillet or wok over medium high flame on your American stove. When the pan is hot, you can add one tablespoon of oil.
Then pour in the garlic and fry them until they are lightly browned and toasted. Please remove the garlic from the pan to a plate and reserve.
Reheat the pan and add two more tablespoons of oil. Remove the chicken and add to 5the pan but reserve the marinade. In a single layer, cook the chicken and make sure that they don't overcrowd your wok. Transfer to a plate the cooked chicken cubes. Continue to cook the rest of the chicken till done.
While frying the chicken, make sure they turn golden brown on one side before you flip them flip to brown the other side. Estimated time would be three to four minutes basing on the heat of your American stove.
When all the chicken is cooked, discard the oil from the pan and wipe clean the pan. Return the pan to the heat and add the remaining oil.
When the oil is hot, pour in the marinade to the pan. When the marinade starts to bubble and cook, return the chicken plus ay of the juices that have accumulated in the plate. Cook and toss the chicken in the sauce. Then remove the chicken to a serving plate and top it with the cooked chopped garlic over.
