Time taken to convert the ingredients into a finished dish: around 40 minutes
1. Firstly, put the kettle on to boil and pre-heat the oven to 190 degrees centigrade.
2. Remove the skin from 1 red onion and chop into a fine dice. Also crush 1 clove of garlic. Set both aside.
3. Now, get 6 tomatoes and place them in a bowl or saucepan. Once the kettle has boiled, cover them with boiling water and leave for 10 seconds. After 10 seconds, pour off the boiling water and then cover the tomatoes with cold water.
4. When the tomatoes are cool-enough to handle, remove the skins. Then cut them in half, remove the seeds and chop into small dice. Set aside.
5. Now heat a medium saucepan, add the onion and garlic and gently dry-fry until soft. Once they are soft, add the tomato flesh and continue cooking for another 2-3 minutes. Remove from the heat, season, and add 8 basil leaves.
6. Get 4 skinned fillets of plaice and put them on a chopping board. Top with a little of the tomato mixture, then roll up each fillet and place in an oven-proof dish. Spoon any remaining tomato mixture on top of and around the fish. Pour 150ml white white over the fish, and place in the oven for 15-20 minutes.
